Ingredients
- whole-wheat English muffin, cut in half
- tomato sauce
- chopped vegetables for topping (sliced mushrooms, spinach, peppers, broccoli florets, et cetera)
- grated part-skim mozzarella cheese
Preparation
Spread 2 teaspoons sauce on each muffin half and top with handful vegetables. Sprinkle cheese on muffins. Place in toaster oven under low heat, and cook until cheese is melted. (Only allow older, well-trained children to use the toaster oven, and be present to supervise and assist as needed.)
