Ingredients
- ½ cup vegetable oil
- ¾ cup sugar
- ¾ cup dark brown sugar
- 1 egg
- 1 tsp. maple, rum or vanilla extract
- 1 cup pumpkin, cooked and smoothly pureed
- 2 1/2 cups flour
- 1 tsp. soda
- 1 tsp. baking powder
- ½ tsp. salt
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- ½ tsp. allspice
- 12 oz. dark chocolate chips
Preparation
Preheat oven to 350 degrees F. In a large bowl, beat oil and sugars together until fluffy. Beat in egg and extract.
In a separate bowl, combine flour, soda, baking powder, salt and spices.
Alternating between the two and working in batches, add flour mixture and pumpkin to egg mixture, beating after each addition until well combined. Stir in chocolate chips. Drop cookies of desired size onto lightly greased baking sheet. Bake 10 to 15 minutes (slightly longer for large cookies). Cool on wire rack.
