Yield: 6 servings
Ingredients
- 1½ cups water
- 1 cup bulgar
- 1 T. olive oil
- 1/2 medium-sized onion, minced
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/4 tsp. ground cumin
- 1/2 cup chopped fresh cilantro leaves
- 1¼ cup chopped fresh mint leaves
- 3 scallions, thinly sliced
- 1 pound ripe plum tomatoes
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
Preparation
Boil water and pour over bulgur. Let stand for 20 to 30 minutes until bulgur becomes soft. Pour out excess water.
In small pan, heat olive oil, and sauté onion until softened—about 5 minutes. Add salt, cayenne pepper and cumin. Remove mixture from heat, and spoon it into large mixing bowl. Let cool, then stir in cilantro, mint and scallions.
Peel tomatoes, remove seeds, and cut into 1/2-inch pieces. Add tomatoes, lime juice, olive oil and bulgur to onion mixture. Stir well, and serve.
